I have the bike on the center stand and prop up the front wheel so that the bike is level from front axel to rear axel.

I then look at the float chambers and they are not level, engine side sits lower then air filter side!

Which side do you set the fuel level to, the high side or the low side?
Or do I need to prop the bike to get the float bowls level?

If you have a torpedo level you can place it on top of the carbs and level the bike by placing shims,(cardboard or washers will work) under the center stand. The fuel levels may not be level so don't use them.

Thanks for the replies, I'm posting this picture to clairify my question.
The bike is level, the carbs sit on an angle as shown.
I've talked with my local Yamaha mechanic, he told me to set the level to the 3mm spec on the high side, which should put the fuel level even with the bottom of the carb body on the low side.

This is a task I am about to do, once I get the rest of my parts...

How do you set the float level, I have done this on many other carbs but not on Hitachi's.

Normally you set the float with the carb upside down, and measure from the gasket surface.

Can you adjust the floats on the bike?
    This would seem exceedingly difficult.

Adjusting on the bike would be hard. Mainly we suggest to check the level on the bike to see if the carbs "need" to be pulled.
Nick you're fine checking the carbs like that. I had previously refered to leveling the bike from side to side. I have always been told that a little angle like you have is acceptable.
