I'm pretty new to this forum as I just got an 82' XJ750 so just bare with me. The question is, if I remove the mufflers will I lose back pressure and need to rejet or something else?

Now I've looked around and there are so many different answers and I thing that's because the question is unclear, so let me make it as clear as possible. Minus new blinkers my bike is stock. I have the stock airbox with stock filter, stock carbs, and stock exhaust. What I have done is removed ONLY the mufflers.

I still have the H-pipe/collector under the bike. What I want to do now is put pipes from the H-pipe down the sides of the bike, in the same position as the mufflers. This is not open headers or straight pipe because the H-pipe is still there. With all that said am I still going to need to rejet? Would adding baffles/silencers inside the two pipes help? Thanks.

the only way you will really know if you need to rejet is to do plug chops.
    (look at the spark plugs).

+2 main jet sizes for no muffler (open headers) looks like the advice it is giving as a good place to start
