Gudgeon pin to crown and skirt bottom to crown measurements must be measured too I believe. Also it makes the choosing process alot easier if the stock piston is kept handy for comparison purposes.

Lots, although if the piston is "taller" a spacer under the barrel may sort it out, if it is "shorter" it may be a harder fix

pistons around the 60mm (I've done a fair bit of looking)
    GPZ600 60mm
    VF500 60.4
    CB650 59.8mm
    CBX550 59.2mm
    GSX250E 60mm
    FZR600 59mm

There's a 60mm set of Wiseco XJ550 pistons on ebay cheap, but they have no rings with them

Have you measured the bore to make sure that size is what you will need? XJ600 will fit in with a rebore and are 58.5mm, I did that with my last one

Does anyone know if the 600 head has bigger valves than the 550 head? In order to maximise the benefit of going big bore.

Yes it does but I cant remember the sizes, you lose the rev counter drive though as on the 600 it is electronic
