    My suggestions:
Did you set the idle when the bike was warmed up? If you set it when cold, when it warms up it will idle faster.

Make sure your throttle cable is lubed up and is returning properly. You may need to do some carb work if the cables are fine. For example if the carb slide is not moving well in the body. Both can cause delayed response after rev.

mine idles at about 900 RPMs or so until it's fully warmed up - and it takes several miles to fully warm up.

possibly a dragging or sticking piston* (see "clunk test")

*carb piston, not - you know, the internal combustion piston

could also be- possibly- some dirt or debris has found it's way to the end of the idle adjustment screw - that would mimic raising the idle speed.

a mis-routed cable might also be the culprit - on my seca, it's pretty easy to mis-route the cable whenever you remove and re-install the gas tank. i don't know if you have a maxim or a seca and if you've recently had the tank off for anything . . . but that could be it, too.

if you put pods or mods requiring jetting and if the main jets were only changed - the stock pilot fuel jets could do this. they would also need to be increased
