i have the carbs completely disassembled and cleaned. i'm replacing bowl gaskets, pilot screw o rings and washers, float valve assembly screens, throttle shaft seals, fuel tube o rings, and drain plugs. this is what i know i need, or at least want to replace. my question is how do i know when to replace things like float needle valves, jets, pilot screws, etc?

When you do a Complete Overhaul, ...

You replace everything while you have them apart.
If the Pilot Mix Screws came out without a fight; reuse them.
    Replace the Pilot O-rings
    Shaft Seals
    Gallery O-rings
    Float Valve Seats and Pins
    Egg Shaped Emulsion Tubes
    Bowl Gaskets
All the fasteners with a Stainless kit.

sorry, i'm still learning all the names of the parts.
"egg shaped emulsion tubes"? are these the rubber tubes underneath the jets located on the topside of the carbs (below the diaphragm assembly)? if so, i didn't know they come out, how do i go about that? i thought the emulsion tube was the brass nozzle with all the ports that the diaphragm needle inserts into on the top end and a jet screws into on the bottom? when you say float valve seats and pins, i'm only familiar with the float valve needle with its tiny wire on top and a spring loaded piston of sorts in the center, the brass assembly that it drops into, and the screen at the bottom of that. am i missing something?

You nailed the emulsion tube, I think Rick means replace them if worn egg shaped, the pins are the needles which attatch to the floats.

You replace worn or damaged metal parts; and dried out/flattened rubber parts. Most o-rings, etc., will need to be replaced.

What bike, so we know which carbs?

Do you have a service manual? If not, you need one.
