I good idea when fitting freshly painted panels is to use lightly applied painters tape around the edges where it might come in contact with the panel beside it when trying to fit it, DO NOT USE MASKING TAPE, it leaves behind a residue and will likely pull paint off, always allow for full curing time when possible so the paint is as durable as possible.
and Take your Time. If its been painted properly a small amount of fuel when filling up is not a big deal. it should have virtually no effect on the paint but I would still try to wipe off any overflow or spilled gas right away.

Thanks for the info-i am more worried about fuel leaking from the petcock seal at the tank and the low fuel sensor leaking at the tank.

Replace the petcock's "oval ring" (o-ring) and your sensor gasket; it shouldn't leak.

One suggestion I have, with nice fresh new paint, is to leave the parts untouched for a week before assembly.

Today's two-part paint is "cured" within hours and dry to handle. However, they are never really "hardened" that quickly. You can do a simple finger nail test to confirm this.

When I had my panels painted, I resisted the temptation to assemble right away. I left them under the sun for a week while I work on other parts of the bike. Then sure enough, the paint could take a gentle finger nail scratch without showing at all.

As for test assembly protection, I have use a couple layers of shrink wrap with good results. Shrink wrap allows me to see the position and mounting holes clearly.
