So I've been busy with work, and finally had a weekend off to work on the beast.

So, I replaced the head gasket and a bent valve and started to retorque the head down. Started low, and ended up snapping a stud about 1/2 way to the 23.1 ft lbs.

So, I now have a broken stud in the engine. Is there a tool to remove the broken stud and put a new one in... or am I pretty much SOL, and need to tear the engine down to remove and replace.

That depends on far down the stud is broken. At the very least you will need to pull the head again.

Probably have to pull the top end completely off, then wheel the entire bike to a machine shop unless you have the tools to do it. Considering one stud snapped, may as well replace them all.
