Pretty much the title. I can fix the cause, but I'm worried about further effects of gas and oil mixing.

Give it an oil change, and clean your carbs. also what bike is it? Gas in oil isn't a really big deal once oil is changed, just helps to clean the inards a little...lol The gas usually gets in from something wrong in the carbs.

New float needle valves, seats, and fiber wahers/o-rings.
Gas in oil is a big deal if the problem isn't fixed. Bent connecting rods, roasted bearings, or even a big boom may result from running an engine with carbs that overflow.

Fix the carbs, drain the oil, install a new oil filter and new oil.

Not to mention that the seals take a beating with gas in the oil.

No-one can really predict this. will depend on how long it was run like this. Fix it run it and keep your fingers crossed. After a few hundred miles you should be in 'all clear' territory..

Thankfully it only sat with gas in the mix for about an afternoon.

if your floats are set so that fuel is overflowing the carbs that is just a matter of setting the fuel levels correctly.
if it is a leaky needle valve/seals then you will not be able to set the fuel level properly
when you set the fuel level you will want to let carbs sit watching for an overflow to happen.

have you changed any of the seals/orings in the needle valves?

am i correct in thinking you have an 82 XJ750, Maxim.
if the po was riding bike when he put it up for the last time it is a good chance fuel levels where someplace in the range of acceptable and that your overflow is from sticking floats, or failed needle valves and/or the seals

    Setting the fuel levels

also make sure that you are shutting of the manual petcock when done riding
