Unless the carb bodies have been crushed, you can rebuild what you have.

2 mixture screws seized and rounded gently drilled into them used an easy out 1st one sheered half its thread out , when new one went in just wouldnt tighten only knew it wrecked half the thread after 2nd one had to drill out as was completely wrecked !! Tried tapping out a new thread before no joys so only chance left is a helicoil which i havent got and honestly do not want to undertake at the moment so its either new carbs or cheap replacement

There are plenty of XJ carbs on Ebay. Both XJ650 and XJ750 carbs are the same; just jetted a bit differently. Some members here have stashes of carbs. Might be worth placing an ad in the wanted section.

Now as for the screws. Are you sure you were drilling into the mixture screws? I've never come across a mixture screw that was so stuck that it'd shatter an extractor. Heck, I can't even imagine being able to get an extractor small enough to use on them, and I know there isn't room enough to drill for an insert since they are so close to the enrichment circuit.
So, I'm curious is all. Pics. I neeed pics! :)

I am considering a 4 into 1 carb conversion , using a 1.5 inch sub mgb carb creating a manifold with a scavange style set up and removing the air box and fitting either a mushroom od pan cake in place of the air box with a proper cold air intake set up
