was wondering if its possible to run no gauges and eliminate wiring on 80 650maxim. Just want the headlight up front. Is this possible?

Well - possible - but likely illegal - check with your local gov't agency to see about the requirements for instrumentation.
Here in Ontario you MUST have a speedometer (at bare minimum) in order to be a licensed vehicle for road use.

is this also possible to do this with a '81 750RH considering it has an Atari strapped to the bars?

    I'm laughing too! Well put!
To answer the question, yes, you can eliminate the entire cluster without any harm to the rest of the bike. There would be some jumpering of the connectors involved but it is "do-able" without too much fuss. Legal issues should be addressed for sure as was pointed out. No sense changing the bike if you get whanged and have to put it back.
Incidently, I happen to like the "Atari" perched on my bars, but I like the smaller unit off of the XJ750J much better. Looks a little neater. If you find you are going to dump your gauges, please let me know, I'm collecting them (I'm trying to source parts to rebuild them).
    Best wishes for the holiday!

I replaced the Atari on my Seca with a set of round gauges from an XS1100 in order to get a 160 MPH speedometer. You don't need any of the computer readouts but you might want to connect the warning lights and the fuel gauge just for reference.
