Was taking out my spark plugs to check if they were lean or rich and in the process of putting it back I check to see that half the threads are stripped / cross threaded.

I bought a thread repair kit M10 x 1.25mm to repair it, not sure if this is the proper kit as I've never repaired a stripped hole before.

Also bought a 14mm spark plug repair tool with a rethread tap.

Do you have to worry about getting debris in the cylinder when you cut new threads?

I suppose a replacement head is the worst case scenario. But that's definitely more time and money than a repair kit!

When you cut the new threads be sure to load the tap with thick, sticky axle grease. That will hold most of the swarf. Most, not all. What you lose won't hurt anything.

Debris should flow out of the cylinder if I crank it without spark plug right?

Cylinder head is costing around $200, ouch!

Yes, it should. The swarf that does not is soft aluminum, one of the reasons it stripped, and what does not come out on the tap or blown out is not hard enough to damage anything. Not the best to have it in there and not "harmless" but not earth shattering either. You can also blow out debris with compressed air before cranking the engine.

Yes, the eBay retail price is a little steep. There are other creative options you could consider if it came down to needing a head.
