My 81 maxim 550 starts up fine and runs great until i take the choke off. When i take the choke off the idle drops real low and it sounds like the engine is struggling to run until it dies. I think that my idle is set too low. Just wondering if anyone knows what the idle should be set at, if that is the problem.

1050 RPM. Try to turn it up and see if that is all it needs. Should it develope a hanging idle which means it idles high and comes back down slowly then the idle is too high and a carb cleaning is needed.

Idle spec on the 550s is 1200rpm.

no it idles fine when i have the choke on it. once i turn it off it idles at about 600-700 rpm and just seems like its having trouble to keep running. also the lights pulse with the engine when it idles. Ill work on it and post an update. Thanks guys for all your help.

Little...your idle speed should be around 1100 rpm. You can adjust the idle speed via the large screw with the big thumbscrew head that exits between the two center carbs, facing the rear of the bike.
