This is my 1st project bike.
The bike starts then dies after 5min riding or idling.
    Any thoughts for a rookie?

Are there any cracks in your carb boots? The rubber hoses that go from your engine block to your carb, theres 4 of them, if these are old and cracked, air gets sucked in and will shut down the motor.

    Nick,
    no apparent cracks.
When I accelerate even slowly, it just dies and strong smell of gas.
Would fuel injector cleaner be beneficial?

    Probably not.

-check and adjust valve clearances. Then do a compression test to verify the motor is ok.

    -WET SET FLOAT LEVELS.

    -bench sync,

    -vacuum sync.
