I am painting my fairing, saddlebags and trunk.

First of all, I took my side cover into a local auto paint shop and had them shoot it with their computer camera to match the color - not very close. It's OK but not what I would have liked. Are there any suggestions as to how to find someone that can color match more closely. I want to use acrylic enamel - no two part paint for me.

Secondly, I ended up with a couple of sags. Have any of you been successful in sanding the sags out without having to reshoot the whole thing?

I have painted a few cars and I am middle of the road in my skills. Usually I am happy enough with the results but this fairing does not meet my meager expectations.

You will have to rub down the area of the sag-s & bring it all forward again, i.e. primer / filler, rub down, fine surface auto filler & re-paint, don't try to get too much paint on in one coat, practice on a piece of cardboard, get the speed of your passes just right, too fast it will have a dry look, too slow & you get runs.
Matching paint from an older bike is difficult, wherever you look on the bike it will have a different degree of fade, try the match with the bottom edge of a side panel.

matching old paint is tough, if it's metallic it's even harder darn near imposable
if you paint everything then you know it matches
why no two part paint? if you used hardener it's just like two part
you should be able to sand out a sag then buff it back although metallic might not work as well
when the paper says 10 min between coats it means 10 not 8 or 12
i used enamel and two part urethane last summer and the two part was much nicer to spray
