On the Hitachi Carbs on my '82 750 Maxim, they have the air compensator jets in the carb intake throat.

My question is: Do these jets need to be removed for cleaning? I am doing a full tear down using a combination of Chacal's and Rickomatic's instructions. These jets are the only things left in the bodies, and I don't want to mess anything up by cleaning the carbs with them left in there.

Also, what is carb dip, and is it a necessary step in cleaning?

The Jets in the Intake Horn are large enough to blow Carb Cleaner right through them.
    Leave them in.
Stick the Carb Cleaner Spray Tube right in them.

Dips are for Parts that are FILTHY.
Dips can put a hurt on rubber seals.

If you have Parts that you think need time in a dip, ...
Buy a couple of extra cans of Spray Cleaner and spray it into a Jar.

Pour the collected Spray into a Tune Can or Yogurt Cup to soak Jets and Emulsion Tubes.

    Recycle.
Collect the Cleaner that you've sprayed to clean parts.
    Filter it.
Pour it into a collection Plastic Coffee Can through a Funnel you have lined with a ScotchBrite Pad.

What gets filtered by the ScotchBrite Pad will be discolored but useful as Cleaner that you can use to let Parts soak in it without worrying about harming the part.
