My bike specs call for a 120/90 18 tire on the back of the 650 Seca.

That size seems hard to find.

Any thoughts on putting a Bridgestone Spitfire S11 110/90 18 instead?

I cannot find the specs for this tire for comparison.
In the past I had a Dunlop D404 which I did not like, it's specs are
    Rim 2.75"
    Dia: 26.25
    Wide: 4.64

    Thanks.

They make the Spitfire in a 120/90/18. I run one on my 550 Seca. It shouldn't be too hard to find. I got mine at a little mom and pop shop.

It's also available in the Kenda Challenger and RetroActive.

I'd run something wider, before I run something thinner on the back end.

I'm running 135/90-R18 right now, feels nice!
