Will any gauge cluster work from maxim to maxim? Mine are screwed on the 83 750(that's what the title says anyway - how do ya know for sure which model ya have?)

Check and cross reference you vin number to find all the information on your bike. It will give you a year make and model. After this information is found, you can start looking into all the other information.
Pretty much all manual speedometers that use a cable will work but the big question is the mounts to put it on you bike. Electric speedometers require a sensor that you may find difficult to use if you don't allready have one. As far as RPM gauges go, you would need to make sure that it is compatible with your system or buy a complete set that replaces all necessary parts to make it funtional. It is easier and usually more cost effective to stay with what you have or as close to STOCK as possible.
