So, the carbs have now been rebuilt twice. Bike was running great I go home to Indiana for 10 days and spend the week after really busy. I got to ride a couple days ago fuel starts pouring out of the number 3 carb.....again. same one as the last time only this time everything is brand new in them they're completely rebuilt. Now the bike won't stay running off of choke, I let it warm up and slowly back the choke off it will run for a few minutes and then it will start running rough and then it will walk its way down until it dies. I have checked the jets and cleaned out the carbs and there is no obstructions in the pilot or main. I am seriously lost as what to do next maybe someone has some ideas on what I should do next because I am frustrated at this point. I enjoy working on it and building it up but this seems to be lingering and I can't figure it out, I just wanna cruise.

Ask on here for someone to take them on, test and return them. Will cost you a couple of hundred Dollars, but has to be worth it.

Unfortunately mini, I'm a welder at a small shop after my business closed up and a father of 4 kids and I just can't afford to do all that at the moment. What I really want is to be able to do everything in my life on my own, I'm really big on that and I know I can figure this out I just need some guidance.

Well I'm not going to argue with that. So you have to be logical, and not assume you have just one issue, more likely two, or maybe three, which on their own wouldn't cause a problem...
If the bike needs enrichment to run it's having air but no fuel - check primary circuits all through to mixture screw holes. Also bench synch carefully, do this right and it should run well enough to ride, then vacuum synch.
If you have carb flooding check the floats aren't getting caught up - what heights did you set them, did you check the wet setting with a tube? I would advise removing and cleaning out the fuel tank as well, remove and check the petcock and strainer is OK.
Lastly, spend some time browsing this forum, not many people get these carbs working right the first, or even second time so you are not alon, lots of traps to catch out the unwary.

All great advice from above. Just wondering how the fuel tank is? Inline filter for the gas just in case something tries to slip through? Carb bowl might have just stuck, as they do that sometimes, or could have something in there. I know you don't want to hear this, but I removed carbs six times from my first XJ project bike before I got them right.

Good luck, keep at it and don't get too stressed about it.

is it possible that it has a hairline crack or that you did miss the leak before? how many miles did you put on the bike after the carb rebuild? did you put oil or fuel on the gaskets before putting them in? I think if fuel is leaking, air is getting in. that might be the reason it won't run without choke.
I had this problem before with my dads bike. after carb rebuild, they started leaking, and it wouldn't run without choke. I adjusted the pilot screws further out, and after the gaskets sucked up fuel, carbs were tight. took some time.
maybe try that. other obvious things would be checking the float height but if there is too much fuel in the float chamber I would expect it to come through the overflow.
