I pulled the front and rear wheels to go get new tires - I'm wondering if there is anything that is crucial to check while I've got the wheels off. I already looked over the rear brakes, they are in good condition. I'm not sure about front brakes because I've got the bike on the centerstand and a Pitbull front stand resting on the dual calipers.

First - don't let any foreign crap get into the bearings.
Check bearings for "looseness" or wear,
    Rear brake shoe check,
Were the front calipers hanging up at all? Good time to clean them, or rebuild them.
Since your bike is "down", lube all cables, driveshaft splines, head tube bearings, brake pivot, things like that.

Clean paint and polish along with the other things that TIMEtoRIDE has listed. Clean wheels make a bike look good.
