What is the process to center my front wheel on my 82 xj750 Seca so it’s more centered between the brake calipers, or do the brakes get adjusted instead? Any help is appreciated!

The calipers slide on pins. Those pins allow it to "float" over the disk.

Edit: let me add that my 550 has a single pin. The idea is that they self-center as the brake is applied and adjust for pad wear over the life of the pads.

You have to Center them in relation to the caliper carriage. Once axle is tight mover the fork on pinch bolt side so the distance between rotor and carrier is equal and tighten pinch bolt
